History & Origins
Isan Culinary Soul & Khao Khua Aromatics
Regarded as the unofficial national dish of Laos and northeastern Thailand (Isan), Larb represents the perfect equilibrium of hot, sour, salty, and savory, distinguished by freshly roasted sticky rice powder that imparts a nutty smokiness.

Finishing, Garnishes & Chef’s Additions

Step-by-Step Instructions
PREPARATION & METHOD
In a dry skillet over medium-low heat, toast raw glutinous sticky rice with a slice of lemongrass or kaffir lime leaf, stirring constantly for 10 to 12 minutes until deep golden-brown. Grind in a mortar and pestle to a coarse, gritty sand texture.
Add 1/4 cup broth to a small saucepan over medium heat. Add ground pork, breaking it up constantly with a wooden spoon for 3 to 4 minutes until barely cooked through and still exceptionally tender and juicy. Remove immediately from heat.
While pork is warm in its natural juices, immediately stir in fish sauce, fresh lime juice, toasted chili powder, and sliced shallots. Toss thoroughly so the warm pork absorbs the vibrant citrus acid and savory umami.
Gently fold in fresh mint leaves, cilantro, culantro, scallions, and toasted sticky rice powder (khao khua). Transfer immediately to a platter flanked by raw crisp cabbage wedges and steaming sticky rice baskets.
Beverage Pairing
Chilled Singha / Chang Beer or Lemongrass Iced Tea
An ice-cold Thai lager served over ice or sweet citrus herbal tea calms fiery roasted chili heat while accentuating fresh mint and lime tartness.
Culinary Science Insight
Starch Retrogradation & Liquid Sorpability
Dry roasting rice gelatinizes and dextrinizes outer starches. Once ground, the porous grains act like micro-sponges, absorbing excess pork juices and lime dressing without making the salad soggy.
