Authentic Osaka Savory Cabbage Pancake (Okonomiyaki)
Osaka’s signature teppanyaki street food—a fluffy, shredded cabbage pancake studded with pork belly slices, lattice-drizzled with savory-sweet sauce and Kewpie mayonnaise, and topped with dancing bonito flakes.
History & Origins
Dotonbori Teppanyaki Culture
Literally translating to “how you like it grilled,” Okonomiyaki evolved in Osaka’s bustling entertainment districts during the mid-20th century, celebrating culinary freedom where diners customize savory batter with crisp seasonal cabbage and sizzling pork belly.

Finishing, Garnishes & Chef’s Additions

- •2 tbsp Japanese Kewpie mayonnaise
- •1 handful Katsuobushi (shaved bonito flakes) that dance in heat
- •1 tsp Aonori (dried green seaweed flakes)
Step-by-Step Instructions
PREPARATION & METHOD
In a bowl, whisk flour, dashi stock, and grated nagaimo into a smooth batter. In a separate bowl per serving, gently toss half the shredded cabbage, 1 egg, tenkasu, and pickled ginger with half the batter using a spoon, aerating gently without crushing cabbage.
Heat an oiled teppan griddle or nonstick skillet to 375°F (190°C). Pour cabbage mixture onto the griddle, shaping it into a round disc 1 inch thick. Lay 3 strips of pork belly side-by-side across the top. Cook undisturbed for 5 minutes.
Using two metal spatulas, swiftly flip the pancake pork-side down. Cover with a lid and steam-fry for 5 minutes until the pork belly is rendered, golden, and crispy. Flip once more pork-side up and cook 2 minutes uncovered to steam off excess moisture.
Brush top generously with sweet okonomiyaki sauce. Drizzle fine zig-zag ribbons of Kewpie mayo. Dust with green aonori seaweed and pile high with bonito flakes, watching them curl and dance in the rising steam. Slice and serve on the griddle.
Beverage Pairing
Draft Asahi Super Dry or Highball (Whisky & Soda)
A super dry Japanese draft lager or ice-cold Suntory whisky highball provides sharp carbonation that cuts through savory mayonnaise and caramelized pork fat.
Culinary Science Insight
Mucilage Viscosity & Aerated Fluffiness
Grated nagaimo mountain yam contains mucilaginous glycoprotein complexes that trap air bubbles and steam inside the pancake, producing a pillowy, souffle-like interior without becoming dense or gummy.
